Nutella and Salted Caramel Stuffed Double Chocolate Chip Cookies

It's been a week of 2013 and I figure some people resolved to be healthier, eat less sweets, etc., so if that's you, don't read any further. These cookies are New Years resolution killers. 
Don't say I didn't warn you.

Basically, this recipe combines all the good things in life into one cookie. And you should make them. Now. 
I mean... Chocolate, caramel, nutella and sea salt? Yes, pleaseeeeee!
The blog I found this on gives great instructions on how to make your own caramel (actually not too hard!) but you can also just melt 1/2 cup of caramels with 2-3 tbs milk.
The recipe for the actual cookie used only one bowl, and filling the cookies was surprisingly easy. Hop on over to Top with Cinnamon to see some little videos that demonstrate how to fill the cookies! I promise it's better than any explanation I could give!

Recipe from Top With Cinnamon
Cookies
1/2 cup butter
1 1/2 cups light brown sugar
1/2 cup cocoa powder
2 eggs
1/4 tsp salt
1/2 tsp baking soda 
2 cups all-purpose flour
3.5 oz milk or dark chocolate chips
1/2 cup nutella
1x recipe for salted caramel (see below) 

 Step 1. Melt butter in a medium microwave safe bowl. Let cool slightly.
Step 2. Add brown sugar, cocoa powder, eggs and salt to the bowl with the melted butter and stir until combined.
Step 3. Add baking soda and flour. Stir until just combined. Fold in chocolate chips.
Step 4. Refrigerate dough while you make the salted caramel. (Recipe below)
Step 5. Roll a rounded tablespoon amount of dough into a ball, then poke a hole in the top. Add 1/2 tsp of nutella and drizzle in some caramel. Make another ball of dough and flatten it out so you can place it on top. Seal the edges. Sprinkle on fleur de sel.
Step 6. Bake for 8-10 minutes in a 350 degree oven!
Voila! Heaven.

Salted Caramel  
1/3 cup granulated sugar 
3 tbsp water 
1/2 tbsp butter 
3 tbsp heavy cream 
1/2 tsp vanilla 
scant 1/4 tsp salt

 Step 1. Measure out butter and heavy cream in advance. 
Step 2. Place sugar and water in a saucepan over medium high heat and stir with a spoon until sugar has dissolved. Stop stirring now!  
Step 3. Swirl the pan as the mixture boils until it turns a golden color.  
Step 4. Remove from heat.  
Step 5. Add butter and stand back! It'll bubble up a little. Stir.
Step 6. Add cream and stir.
Step 7. Add vanilla and salt.
Step 8. Congratulate yourself for making caramel from scratch!
