Hi! Long time, no blogging! Sorry!
I got reallyyy busy in December between finals and making a 100+ page Shutterfly book of Courtney and I's Eurotrip for her Christmas present (worth it, it turned out so well!), blogging was kind of left in the shadows.
Luckily, I tried out an amazing salad when I was home and after fighting over the leftovers with my sister then remaking it to eat at school, I've been inspired to tell you about it. After all, it's been a while since I posted a recipe on here.
For all of you who added something along the lines of "eat healthier", "eat more vegetables", or "learn to love kale" to your list of New Years Resolutions, this one's for you! It's filled with some crazy superfoods like kale (duh), quinoa, avocado, pomegranate seeds and almonds (oh and goat cheese, which may not be "good" for you but hey, everything in moderation, right?!)

For the salad:
4 cups of Kale
1 Avocado, diced
1 cup cooked quinoa (1/2 cup dry quinoa + 1 cup chicken stock or water)
1/2 cup pomegranate seeds
1/2 cup toasted, sliced almonds
1/4 cup goat cheese
For the dressing:
1/4 cup olive oil
1/4 cup apple cider vinegar
Zest of 1 lemon
Juice of 1 lemon - 2-3 tablespoons
1 tablespoon agave
For the assembly:
Whisk together all the dressing ingredients, then toss everything together in a big bowl. Super simple. If you've never made quinoa before, I like to make it with chicken stock to add more flavor, but you can also just cook it in water. Take1/2 cup quinoa plus 1 cup chicken stock, heat until boiling, bring it down to a simmer and cover for 15 more minutes until quinoa is fluffy! Easy peasy.
